How to gain more confidence riding my horse?

I have little confidence/trust while riding my horse. She is very hard to turn (will just turn the other way) and can be very stubborn a.k.a not wanting to move or eating NON STOP... I would like to know anything I can do to help me and my horse both become better and be able to ride with pleasure!
